Oat-Wheat Treat Bread

Sorry no pictures, gobbled up too quickly. As promised from Beatrice Ojakangas’s Great Whole Grain Breads. She’s married to a geologist and an excellent baker (lives locally).

Oat-Wheat Treat Bread

for 1 loaf.

  • 1package active, dry yeast
  • 1 cup warm water
  • 1 tsp sugar
  • 1 tbls butter, softened
  • 1 tsp salt
  • 3/4 cup rolled oats
  • 1/2 cup whole wheat flour
  • 1 cup bread flour or all purpose flour
  • 1 egg white beaten with 2 tbs water (or I just beat the whole egg and used that. I have a hard time figuring out what to do with egg yolks).

In large mixing bowl, dissolve yeast in warm water. Add sugar, butter, salt. Stir in 1/2 cup of oats and all the flour. Beat 50 strokes. Cover a baking sheet with parchment paper or generously grease it. Sprinkle a 9 inch circle with 2 tbs of remaining oats — spread to cover the circle. Let rise 30 minutes (turn on your oven if it is slow to warm up). Brush with egg and sprinkle with remaining 2 tbs rolled oats. Bake in 400 F oven 20-25 minutes. Cut into wedges to serve.

Kids enjoyed theirs with butter and jam. I made a tuna sandwich with my 2 slices. Erik: just butter.  Very good with a winter soup, or when you just don’t have a lot in the house.
