It’s farm season – or what to do with five cucumbers

Last week our neighbors with whom we split a farm share were on vacation. Veggies abound!

So I asked around, “what would you do with five cucumbers?”

Thai cucumber salad

  • 3 large cucumbers. Peeled, seeded, and cut into 1/4 inch slices
  • 1 tbs salt
  • 1/3 to 1/2 cup sugar
  • 1/2 cup rice wine vinegar
  • 2 jalapeƱo peppers, seeded and chopped (I used other unnamed hot pepper
  • 1/4 cup chopped cilantro
  • 1/2 c chopped peanuts. I used salted.
  • I also added a few thin slices of red onion.

Don’t do this step until you are ready to go—> toss cues with salt, leave to drain in colander in sink for 30 minutes. Rinse with cold water. Drain and pay dry with paper towels.

Mix sugar and vinegar in a jar. Mix everything together with dressing, except peanuts. Toss. Sprinkle with peanuts. Serve with salad greens, over noodles, or on its own.

It doesn’t keep super well, but is easily scale-able.
